In the 21st century, is there any profession more revered than the mixologist? Truly, those fluid alchemists take the barest of drink ingredients and spin them into liquid gold.

But contrary to common belief, the talented bartender can shake up more than a martini –curating an alcohol-free cocktail is an essential skill. So, to assist the armchair mixologist this summer, we’ve put together a few revitalising mocktails to share by the pool, beach or at your next girls night in.

Whip out the champagne flutes and celebrate summer in style. Pomegranate steals the show in the Mary Poppins, combining with Appletiser to produce a match undoubtedly made in heaven. Simply shake and strain, garnishing with a touch of lemon zest before sipping your way to the ultimate relaxation.

This classic Mexican highball (its name is Spanish for “dove”) has that fine dry balance of sweet apple and citrus so welcome on a summer’s afternoon – with a kick of pepper to bring it all together.

Get out your shaker and whip up the grapefruit, lime and sugar syrup over ice, top up with Appletiser and garnish with a wedge of pink grapefruit, apple and black pepper.

This most venerable of cocktails should be compulsory on bar lists everywhere for one simple reason: it’s delicious. It’s also embarrassingly easy to make: throw some mint, lime, sugar and Appletiser together with some ice, then bung it in a glass. It’s deliriously refreshing.
