Secret Healthy Sweet Delicious Summer Beet Salad

  • 4 medium beets scrubbed, trimmed, and halved
  • 10 ounces mixed baby salad greens
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons aged balsamic vinegar
  • 3 ounces goat cheese


  • Place beets in saucepan, cover with water, and bring to a boil. Cook for 20–30 minutes. Drain, cool, and cut beets into cubes.
  • To make the dressing, whisk together balsamic vinegar and olive oil in a small bowl.
  • Place large portion of baby greens onto each salad plate, followed by beets. Top with goat cheese and a drizzle of the dressing.
  • Fall back in love with salads.
