Charred Lime & Chili Shrimp Toast

Ingredients:
- 4 slices crusty bread
- 1 lb medium shrimp, peeled and deveined
- 1 lime, halved
- 2 avocados, sliced
- 2 mangos, sliced
- 2 cups arugula
- 1 jalapeno, sliced
For the Chili Honey Glaze:
- 3 tablespoons honey
- 1⁄2 teaspoon chipotle chili powder
- 1⁄2 teaspoon red pepper flakes
For the Pickled Onions:
- 1 red onion, thinly sliced
- 3⁄4 cup red wine vinegar
- 1⁄2 cup water
- 1 tablespoon granulated sugar
- 1⁄2 tablespoon salt
- 1⁄2 teaspoon of whole black peppercorns
Directions:
In a small bowl, mix honey with chipotle chili powder and red pepper flakes. Set aside.
To a small saucepan, add the red wine vinegar, water, sugar, salt and peppercorns and bring to a boil. Pour over the sliced red onions and set aside. Skewer and liberally salt the shrimp.
Grill the shrimp and halved lime. As the shrimp are cooking, brush them with the honey mixture. Once the shrimp are fully cooked and the sauce is caramelized remove from the grill. Brush each slice of bread with olive oil and Grill until toasted.
To serve, top each toast with arugula, avocado, mango, shrimp, jalapeno and pickled onions. Finish with a squeeze of lime and a sprinkle of flaky salt. Serve with Gold Peak Tea with Simply Lemonade!
