Summer Squash Tomato & Goat Cheese Pasta

Ingredients:
- 1⁄2 lb cherry tomatoes
- 2 yellow squash, sliced about 1⁄2 inch thick
- 1⁄4 cup basil, torn or cut into ribbons
- 8 oz linguine
- 4 oz goat cheese
- 4 tablespoons heavy cream
For the Garlic Breadcrumbs:
- 1⁄2 cup panko breadcrumbs
- 1 tablespoon olive oil
- 3 cloves of garlic, smashed
Directions:
To make the garlic breadcrumbs, in a saucepan heat olive oil over medium heat, add the garlic and fry until fragrant. Add the breadcrumbs and toss or stir continuously until the bread crumbs are golden brown. Set aside.
Coat the tomatoes and squash with olive oil and season liberally with salt and pepper. Grill, or roast on a cast iron, over medium high heat until the tomatoes are bursting and the squash is charred.
For the whipped goat cheese, in a large serving bowl, add the goat cheese and heavy cream. Using a hand mixer or whisk, whisk until light and fluffy.
Boil pasta according to instructions and immediately add the drained pasta to the bowl of whipped goat cheese, sprinkle in basil and mix until the pasta is fully coated with the sauce.
To finish the pasta, sprinkle with the garlic breadcrumbs, top with the grilled vegetables and more fresh basil for garnish.
