Cranberry Cocktail Meatballs with Simply Cranberry® Cocktail Recipe

Ingredients:
meatballs
- 1 pound of ground beef
- 1 large egg, lightly beaten
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoons onion powder or dried minced onion
- 1 tablespoon garlic powder
- 1.5 tablespoons Worcestershire sauce
- 1 tablespoon Simply Cranberry Cocktail
- 1 tablespoon freshly minced parsley
- 1 tablespoon olive or canola oil
sauce
- ½ cup BBQ sauce of choice
- 2 cups Simply Cranberry Cocktail
- 1 tablespoon Dijon mustard
Instructions:
- Pre-heat over to 350 degrees F. Combine all ingredients for meatballs in a large bowl and mix well. Scoop mixture with tablespoon or 2 oz portion scoop and roll into balls, set aside on greased sheet tray once rolled.
- Whisk BBQ sauce, Simply Cranberry Cocktail and Dijon mustard in a small saucepan and heat over medium for 10 minutes until reduced by half.
- Place meatballs in oven and bake 20-25 minutes until internal temperature reaches 160 degrees F. Remove from oven and drain meatballs on paper towel to remove excess fat.
- Pour warmed cranberry sauce over meatballs, top with additional parsley and serve.
