Cranberry Cocktail Meatballs

Cranberry Cocktail Meatballs with Simply Cranberry® Cocktail Recipe

Ingredients:

  • 1 pound of ground beef
  • 1 large egg, lightly beaten
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoons onion powder or dried minced onion
  • 1 tablespoon garlic powder
  • 1.5 tablespoons Worcestershire sauce
  • 1 tablespoon Simply Cranberry Cocktail
  • 1 tablespoon freshly minced parsley
  • 1 tablespoon olive or canola oil

Instructions:
 

  • Pre-heat over to 350 degrees F. Combine all ingredients for meatballs in a large bowl and mix well. Scoop mixture with tablespoon or 2 oz portion scoop and roll into balls, set aside on greased sheet tray once rolled.
  • Whisk BBQ sauce, Simply Cranberry Cocktail and Dijon mustard in a small saucepan and heat over medium for 10 minutes until reduced by half.
  • Place meatballs in oven and bake 20-25 minutes until internal temperature reaches 160 degrees F. Remove from oven and drain meatballs on paper towel to remove excess fat.
  • Pour warmed cranberry sauce over meatballs, top with additional parsley and serve.
