Peachy Bread Pudding with Simply Peach® Recipe

Ingredients:

- 1/2 cup Simply Peach
- 3/4 cup heavy cream
- 3/4 cup whole milk
- 1/2 teaspoon almond extract
- 2 large eggs, beaten
- 1 cup sugar
- 2 peaches, peeled and sliced
- 1/2 pound day old brioche, cut into 3/4-inch thick slices
- 2 tablespoons light brown sugar

- 1/4 cup butter
- 1/2 cup light brown sugar
- 1/2 cup Simply Peach
- 1/3 cup heavy cream
- 2 tablespoons dark rum
Instructions:

- Preheat oven to 325°.
- Whisk together Simply Peach and next 5 ingredients in a medium mixing bowl.
- Lightly grease an 8-x 8-inch baking pan. Layer bread slices and peaches alternately.
- Pour cream mixture gently over the top; sprinkle evenly with brown sugar.
- Bake at 325° for 30 minutes or until golden brown. Let stand 10 minutes before serving with Simply Peach Rum Sauce.

- Melt butter in a small saucepan over medium heat.
- Stir in brown sugar, Simply Peach, and heavy cream.
- Cook over medium heat, 10 minutes, or until thickened, whisking occasionally.
- Remove from heat and whisk in rum.
Yields 8 servings.
